as most of you know, wholly eats is new and just getting off of the ground. there are so many places i’d love to take it, and there are so many avenues i could go down to get there! the photo of the day idea for the month of july was an alright one, but when days went by with life interfering in my ability to produce said photo, it felt like a failure! that being said, i am in the midst of a brainstorm that is brewing new features for wholly eats. i’m thinking of ways to reward readers, and possibly doing different themes for different days of the week. i would love any suggestions that you might have that would make wholly eats even cooler than it already is!

one of the co-op specials this week was a sale on daiya shredded “cheese”. i don’t usually buy vegan cheeses because of the processed nature of them. that, and they also tend to be a little pricey, but guess what? daiya cheese is worth it’s weight in gold! in sanskrit, dayaa means “loving, kindness and compassion”. this i discovered while checking out the daiya website, but instinctually, i knew it the moment i tasted this vegan, gluten-free, soy free and cholesterol free cheese that melts and stretches and tastes like the real thing! i can read the ingredients and pronounce all of the words, there are no preservatives, just a whole bunch of love and compassion bundled into a bite of wholly eats! so, my opinion has changed a bit. here are the photos to support that change🙂
after my experience with the mozzarella, i went back to the co-op to stock up before the sale was over. i was too late, they were out of the mozz! i decided i would grab one of the last two packages of cheddar shreds. now i wish i had grabbed them both!
i am going to be near one the bigger food co-ops in the area today. i will definitely be stopping to see if they carry daiya’s new wedges of havarti style vegan cheese!
the farm share pick ups over the past 3 weeks have been un-photographed and a little less “adventurous” than i would have liked. sunny, my usual cohort in the atlas farm escapades, was busy enjoying a session at deerfield academy’s summer art camp. i am hoping to have at least a couple more trips with her before the summer is over! here is what last week’s harvest brought to our table.
when i was putting away all of the vegetables, i noticed that i still had some of last weeks bunched rainbow carrots. they weren’t really crisp anymore, but they weren’t bad, so i had to use them! i chopped them up in the food processor and that is when their crispiness magically returned! i also needed to do something with the left over mung bean noodles that the girls and i had used for summer rolls and then it clicked! i made a thai inspired dish by sautéing an onion until clear and beginning to brown. while that was cooking i mixed together some peanut sauce that i keep on hand, tamari, apple cider vinegar and a little veggie broth. when the onions were done i added the cold noodles and the shredded carrots, stirring for about a minute before adding the sauce and cooking for about 3 more minutes. because i made this on a whim and have never tried it before, i wouldn’t call it a recipe. i will try it again and keep track of the ingredients and the precise amounts to post at another time.
after making this dish, i still had about a cup of chopped carrots from last week’s farm share left and decided that the next day i would try baking a carrot cake! i’ve never made one before so i did a quick google search and came across a great vegan blog with a classic carrot cake recipe that sounded simple enough. the only thing i was missing was the flour! all i had in my pantry was a gluten-free baking flour. i decided it wasn’t a big deal, it just meant i needed to add some xantham gum to the mix. as i was stirring up all of the ingredients, i remembered that gluten free baking is quite different than baking with traditional flour and in the end, i had to double the baking time. it turned out very good, but i think next time, i’d like to try it with regular all-purpose flour!
